Workday Energy Balls

A handy recipe and secret weapon for your lunch box.
Workday Energy Balls will ensure you feel fully charged during your hectic work week,

Ingredients

  • 1 cup nut butter
  • 2 tbsp coconut oil
  • 10 dates, depitted and soaked
  • 1/4 cup chia seeds
  • 1/4 cup ground flax
  • 1/4 cup raw cacao powder or organic cocoa powder
  • 1/2 cup chocolate chips
  • Pinch sea salt

Optional: 

  • 1/2 cup chocolate for melting
  • 1/2 cup coconut flakes 

Method

  1. After the dates are soaked and soft, drain and place in a food processor.
  2. Add all other ingredients and mix until a dough ball is formed.
  3. Break dough into smaller balls, about 2 cm in diameter
  4. Roll into balls until smooth.
  5. Place on a plate and put in the fridge to chill.

Optional:

  1. Melt chocolate chips and pour melted chocolate over balls.
  2. Roll in coconut flakes for an extra treat! 
  3. Place on a plate and put in the fridge to chill.
