Chef Barb’s Energy Truffles

Ingredients

1 cup Medjool dates, pitted (soaked if not tender) (A high fibre sweetener to balance blood sugar)

1 cup walnuts (for Omega 3 fats for brain health)

1 tbsp melted coconut oil (for brain health)

2 tbsp nut butter of choice (for protein for muscle development and immunity)

2-3 tbsp raw cacao or fair trade cocoa powder (for Magnesium to relax muscles and alertness) 

2 tbsp chia seeds (for blood sugar balance, fibre for digestion and fats for energy) 

1/2 tsp sea salt (for electrolyte balance and flavour)

 

Additions (your choice): 

1/4 cup dried goji berries (for immunity)

1/4 cup high-quality chocolate chips or cacao nibs (for joy)

Roll in shredded coconut (for fun!)

Method

In a food processor, combine the dates and walnuts. Process until the mixture becomes one big ball. Remove the lid, break the mixture up, and add the rest of the ingredients. Chill in fridge for 20 minutes. Prepare a baking sheet with parchment paper. 

Using a teaspoon, roll mixture, a spoonful at a time, between your palms until a ball about 3 cm across is formed. Chill for 20 minutes in refrigerator. Pack these little truffles with you to work to pop in your mouth whenever you need a boost. Bring enough for your co-workers!
